( Chicken with rice soup).
There are so many Khmer recipes for chicken soup, but this easy recipe from Khmer Krom at *Khleang* Soc Trang province is absolutely delicious.
- Ingredients :
- 1 Whole chicken, cleaned and drained
- 10 Cups water
- 2 Tablespoons vegetable oil
- 1 Cup un cooked Jasmine rice
- 4 Cloves garlic, minced
- 1 Yellow onion, chopped
- 3 Tablespoons fish sauce
- 1 Teaspoon salt
- 1 Tablespoon sugar
- ¼ Teaspoon black pepper
- 4 Stalk green onion, chopped
- Procedures :
Put chicken and water in a large soup pot, cook till chicken meat tender, remove chicken from soup broth, put it in a large plate and set a side to let it cool.
Heat up a small skillet or wok.
When skillet is hot, add oil and rice,sauté rice till it light brown, add garlic and onion, stirs well.
Add sauté rice in soup broth and cook till rice tender.
Seasoning with fish sauce, salt, sugar and black pepper.
Cut cooked chicken in to bite sizes and set a side.
TO SERVE:
Pour some rice porridge in a bowl, add few pieces of cooked chicken on top and top with green onion.
Serve hot with bean sprout , chopped mint leaves , slices lime , chopped chili pepper and soy bean paste *xieng paik*.
