( Stuffed Cornish hen).
Bake Cornish hen stuffed with grounded pork is delicious.
Back home, we use chicken and because most of us don't have oven we would steamed it. Stuffed chicken normally serves at special occasions like wedding banquet or *Bonn* religious holiday.
For this recipe I used Cornish hen (small chicken)and I baked instead of steamed.
- Ingredients :
- 1 Chicken or Cornish hen, cleaned and pat dried with paper towel
- 2 Cloves garlic, minced
- 1 Teaspoon soy sauce
- ¼ lb Grounded pork
- 2 Stalks green onion, chopped
- ½ Cup shredded carrot
- 1 Tablespoon frozen or fresh minced lemon grass
- ½ Teaspoon fish sauce
- 1 Teaspoon soy sauce
- ¼ Teaspoon five spice powder
- 1 Teaspoon sugar
- ¼ Teaspoon black pepper
- 2 toothpicks
- ½ Cup water
- Procedures :
In a small bowl, mix garlic with soy sauce, mix well.
Put chicken in a baking pan, rubs garlic sauce on chicken and set a side.
In a large bowl, mix grounded pork with green onion, carrot, lemon grass, fish sauce, soy sauce, five spice powder, sugar and black pepper together, mix well, and stuffed chicken with marinated grounded meat. There is a pocket between Cornish hen breasts, that can stuffed meat also, use toothpick to seal the stuffing, pou ½ cup water on bottom baking pan, covered it with foil.
Bake at 350 degrees for 30 minutes.
Removed foil, spoons juice over chicken, and continue to bake till chicken meat tender and golden brown.
Removes tooth picks before serve.
Serve hot with rice and tamarind sauce.
