( Sweet rice with durian).
Durian is the smelly fruit that originate from Borneo. The name durian is believe from Malaysian meaning spines, because of the spikes on the outer fruit. It's the most expensive and the most popular fruit in Asia. You can find durian plantations scattered along Khmer Kampuchea Krom (South Vietnam)land and Long Ho(Vinh Long)province is well known for produces the best Durian.
Delicious sweet rice with durian is another finest sample from Khmer Krom cuisine.
Note: Authentic recipe made with steamed sweet rice.
- Ingredients :
- 2 Can coconut milk
- ½ Cup palm sugar or regular sugar
- ½ Teaspoon salt
- ½ lb seedless fresh or 1 piece frozen durian pulp
- 2 Cups un-cook Jasmine sweet rice, rinse and drained
- 1 Cup water
- Procedures :
Pour coconut milk in a small pot and simmering till coconut sauce thicken. Add sugar and salt in coconut sauce, stirs well. Pour ½ cup prepared coconut sauce in a small bowl and set it a side.
Add durian pulp in remaining coconut sauce, stirs well, continue to cook in low temperature till coconut sauce bubbling. Turn off the stove and set it a side.
Cook sweet rice with one-cup water in an automatic rice cooker. When sweet rice tender, separate cooked sweet rice with spatula and pour ½ cup prepared coconut sauce over cooked sweet rice, mix well. Spreads sweet rice in a container or cake pan, spreads prepared durian sauce over sweet rice and let it set to cool off before serve.
