(Blackeye peas pudding).
Sweet rice with black eye peas and coconut sauce is absolutely delicious Khmer Krom ethnic food.
- Ingredients :
- ½ Cups uncooked black eyes peas
- 5 Cups water
- ½ Cup uncooked Jasmine sweet rice
- 5 Cups water
- 1 Cup sugar
- ¼ Teaspoon salt
- 1 Teaspoon pure vanilla extract
- Procedures :
Put black eye peas with 5 cups water in a medium pot, cooked till peas tender, drained and set a side.
In a non-stick pot, cook sweet rice with 5 cups water till rice tender(do not over cook), stirs occasionally.
Add cooked blackeye peas, sugar, salt and vanilla, stirs well.
Top with prepared coconut sauce before serve.
Serve hot or warm.
