(Banana cake.)
Banana is very useful fruit in Kampuchea Krom. We use banana blossom for soup or salad. Banana leaf for wrapping rice cakes and many other treats. Young green bananas are eaten raw or cook. Ripe bananas for food offerings, eaten raw or turned into many desserts. Chopped banana stalks make great pig food.
For best result for this moist and delicious banana cake use ripped banana. This is very easy Khmer Krom recipe.
- Ingredients :
- 1 Teaspoon vegetable oil
- 2 Eggs
- ½ Stick of butter
- 1½ Cups sugar
- ¼ Teaspoon salt
- ¼ Teaspoon baking powder
- 1 Teaspoon pure vanilla extract
- 2 Ripped banana, peeled and mashed
- 1 Cup All purpose flour
- Procedures :
Pre heated oven at 325 degrees.
Grease up a small cake pan or 2 bread pan with oil, set a side.
In a large mixing bowl, mix eggs with butter, sugar, salt, vanilla and baking powder, mix well, add banana, mix well, add flour, mix till smooth. Pour mixture in greased cake pan or bread pan.
Bake in pre heated oven for 20 minutes or till when insert tooth pick in the center cake and it come out cleaned.
Some ovens temperature is hotter than other , check on your cake after 20 minutes. You don’t want to over or under cook the cake.
Serve either hot or cold. Taste best when top with prepared coconut sauce
