( Trout with turmeric )
Fish caramelized with turmeric and lemon grass sauce is delicious Khmer Krom country food.
- Ingredients :
- 2 Cups water
- 3 Cloves garlic, minced
- ½ Cup fresh or frozen
minced lemon grass
- ½ Teaspoon turmeric powder, or ½ tablespoon grated fresh turmeric roots
- 2 Chopped hot chili pepper, or to your tasted(option)
- ½ Cup fish sauce
- ½ Cup sugar
- ½ Teaspoon salt
- 1 Medium whole trout, 1½ to 2 lb, cleaned and cut to chunks
- 1 Stalk green onion, chopped
- ¼ Teaspoon black pepper
- Procedures :
Mix water with garlic, lemongrass, turmeric, chili pepper, fish sauce, sugar and salt together in a skillet, or a pot that big enough to hold all ingredients.
Add fish and simmering till fish tender and water reduced, while cooking
turns fish over couple time so both sides well coated with sauce.
Top with green onion and black pepper.
Serve hot with rice.
