This sweet treat is inexpensive and is very delicious Khmer food.
NOTE: Pumpkin, sweet potato, taro root and cassava(yucca) in this recipe were peeled, cubes, cooked before measured.

Soaked tapioca in a bowl of hot water for 30 minutes, drained and set it a side.
In a non-stick pot, put coconut milk, vanilla, sugar and salt together, cook and stirs till sauce bubbling,add tapioca to boiling coconut sauce, stirs, simmering till tapioca tender.
Add cooked pumpkin, sweet potato, cassava and taro root, stirs, simmering for 10 minutes, stirs well.
Top with crushed peanut before serve.
Serve hot or warm.
