Borbo trey.
( Fish and rice soup).
Khmer Krom gingery fish and rice soup very tasty. Back home, most people prefers snakehead fish for this soup but basa or catfish is very good also.
- Ingredients :
- 2 Tablespoons vegetable oil
- 1 Cup un cook Jasmine rice, rinsed and drained
- 3 Cloves garlic, minced
- 1 Yellow onion, minced
- 1 Tablespoon grated fresh ginger root
- 1 Tablespoon preserved shredded cabbage
- 1/3 Cup large dried shrimp soaked in hot water, rinsed
- 7 Cups water
- 1½ lb catfish fillet
- 2 Tablespoons fish sauce
- 1 Teaspoon salt
- 1 Tablespoon sugar
- ¼ Teaspoon black pepper
- 2 Stalks green onion, chopped
- Procedures :
Heat a large soup pot.
When soup pot is hot, add oil and rice, stirs till rice turns light brown.
Add garlic, yellow onion, ginger, preserved shredded cabbage and dried shrimp, stirs well.
Add water and fish stirs and cook till fish tender, remove fish from soup pot, put it in a bowl, use fork to break fish fillet to chunks then put fish back with rice soup, stirs. Add more water if you like the soup thinner.
Seasoning with fish sauce, salt, sugar and black pepper.
Top with green onion before serve.
Serve hot with mix bean sprouts and mint, slices lemon , chopped chili pepper and soy bean paste( xieng.)
