(Cinnamon cashew rice. )
Presently *Kampuchea Krom* (now know as South Vietnam) is one of the world’s leading exporters of cashew nuts follows by Brazil and India.
Many years ago, only the poor Khmer cooked with cashew nuts. Today cashew nuts are use in cooking around the world. Back home, when not much rice left, poor villagers still add cassava root (yucca), sweet potato or cashew nuts with rice for extra starch. Edible cashew fruits also very popular back home; cashew fruits have a sweet and tart taste that our people like. When in season, cashew fruits are sold at every market in *Kampuchea Krom*.
One of my favorite Khmer oldies songs is “pka chanti” meaning cashew’s flower.
Khmer Krom fragrant cinnamon rice with roasted cashew is very delicious. This is one of my family favorite recipes to make for our special guests and for party. Authentic recipe used pork fat instead of butter. Sometimes, I would use the same recipe but with roasted almonds instead of cashews.

Cook rice and water in a rice cooker, when rice cooked, add butter, salt and cinnamon, stirs well, and set a side.
Pre-heat a small skillet, add cashew, stirs till cashews hot, add roasted cashew with rice, stirs well.
Serve hot.
