(Khmer Krom mango fish. )
Crispy fried fish with mango sauce is delicious Khmer Krom food.
I've cooked several different kind of fish with this recipe, red snapper, tilapia, seabass, catfish all very good.
- Ingredients :
- 2 Tablespoons vegetable oil
- 1 Whole fish of your choice,1½-2 lbs, clean
- ½ Tablespoon lime juice
- 1 Tablespoon light brown sugar
- 1 Tablespoon fish sauce
- ½ Tablespoon soy sauce
- ½ Teaspoon salt
- ¼ Teaspoon black pepper
- 1 Tablespoon vegetable oil
- 3 Cloves garlic, minced
- 1 Yellow onion, chopped
- 1 Stalk celery, chopped
- 1 Tomato, diced
- 2 hot chili peppers or ½ bell pepper, diced
- 2 Ripped mango, diced
- 2 Stalks green onion, chopped
- Procedures :
Pre-heated a large skillet or wok with high temperature.
When skillet is hot, add 2 tablespoons oil, put fish in hot oil, fry fish till both sides golden brown, put fried fish on a large plate, set a side.
In a small bowl, mix limejuice with brown sugar, fish sauce, soy sauce, salt and black pepper together, mix well, set it a side.
Pre heat a sauce pan with high temperature.
When saucepan is hot, add 1 tablespoon oil, garlic, yellow onion, celery, tomato, chili pepper and mango, stirs well.
Pour prepared lime sauce over, stirs well, add cooked mango and green onion, stirs till sauce bubbling.
Pour mango sauce over fried fish.
Serve hot with rice.
