Crispy fried dough with seasoning mashed potato and peas filling are heavenly delicious vegetarian treat from India. Samosa is great appetizer or side dish for a large party. Make samosa ahead and just reheat it in the oven when ready to serve.
- Ingredients :
- 3 Large bake potato, peeled and cut small chunks
- 5 Cups water
- 1 Stick of butter
- ½ Yellow onion, chopped
- ½ Cup frozen peas
- ½ Teaspoon curry powder
- ½ Teaspoon ground coriander
- ½ Teaspoon ground cumin
- ½ Teaspoon salt
- ¼ Cup chopped fresh cilantro
- 1 Package flour tortillas
- 4 Cups vegetable or peanut oil for deep fry
- Procedures :
In a large pot, boiled potatoes with 5 cups water until it tender.
Pour cooked potato in to a colander to drain. Do not rinse potato.
Put potato in a large bowl with ½ stick of butter and mashed it.
Pre-heated a skillet or wok, when it hot melted the remaining butter ,and sauté onion and peas.
Seasoning with curry powder, coriander, cumin and salt.
Add potato and cilantro. Stirs well and removed from the heat.
Take a piece of flour tortilla and cut it in half.
Moisten with water around all edges.
Fold both ends over to form a small cone shape.
Stuffed prepared potato in to the cone-shape.
To seal, pressed both sides’ tortillas together to form a triangular shape.
Continue making samosa until done.
Pre-heated oil in a large skillet or wok.
Deep fry samosa till it golden crispy.
Places samosa on a plate covered with paper towel to get rid of excessive oil.
Serve hot with salsa or chutney.
