(Gingery frog legs. )
This authentic Khmer country food with frog legs and caramelized ginger sauce is delicious. Back home, poor Khmer Krom eat frog legs and the well to do eat chicken legs. But in America, it is cheaper to eat chicken legs because frog legs are expensive and fresh frog legs are hard to find. :)
- Ingredients :
- 1 Teaspoon sugar
- 1 Teaspoon water
- ¼ Cup water
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- 1 Yellow onion, sliced
- ¼ Cup juliennes fresh ginger root
- 1 lb Fresh or frozen frog legs
- 1 Tablespoon fish sauce
- 1 Teaspoon sugar
- ¼ Teaspoon salt
- A dash of black pepper
- 2 Hot chili pepper,sliced(option)
- 1 Stalk green onion,chopped
- Procedures :
In a small sauce pan, put 1 teaspoon sugar and 1 teaspoon water, and cooked in low heat till sugar turns dark brown color, and not burn.
Immediately pour ¼ cup water over caramelized sugar, stirs well, removed caramelized sauce from the heat and set a side.
Heat up a skillet or wok in high temperature.
When skillet hot, add oil, garlic, yellow onion, ginger and frog legs, stirs well.
Seasoning with fish sauce, sugar, salk, black pepper and caramelized sauce, stirs well.
Simmering till frog legs tender,( occasionally turns frog legs over during cooking).
Add hot chili pepper and green onion.
Serve hot with rice.
