(Vegetarian sand dollar cake . )
Circular rice flour cakes with scallion and coconut sauce are absolutely delicious Khmer Krom ethnic food. Vietnamese people love Khmer sand dollar cake but they couldn’t pronounce “ num kroot” so they call it “ banh’ kho.t” instead.
- Ingredients :
- COCONUT SAUCE:
- Add 1 more teaspoon cornstarch to ingredients for
coconut sauce, and 3 stalks chopped green onion
- FLOUR BATTER:
- 2 Cups rice powder
- 2 Cups fresh or can coconut juice
- 1 Cup coconut milk
- ½ Teaspoon salt
- 4 Stalks green onion, chopped
- 2 Tablespoons vegetable oil
- Procedures :
Follow instruction on coconut sauce recipe , but add 1 more teaspoon cornstarch to coconut sauce before cook and when sauce cooked add chopped green onion, stirs and set a side.
In a large bowl, mix rice flour with coconut juice, coconut milk, salt and green onion. Stirs well and set it a side.
Pre heat sand dollar cake pan, when it hot brushed oil on each cup
Pour flour batter on each cup and add ½ teaspoon prepared coconut sauce on top of each cup. Covered sand dollar cake pan with lid and cook till it done. Removes each cake from the pan with a fork and spoon, put a plate and set it a side.
Continue to next batch of cakes untill flour batter is gone.
Sand dollar cake taste best when serve hot or warm with sweet soy sauce dipping or with vegetarian fish sauce.
Some people like to wraps sand dollar cakes with lettuce, cucumber, mint leaves and dips with their favorite sauce.
