Broken rice with lemon grass shrimp and fry egg is absolutely delicious Khmer Krom country food.
My great aunt said my ancestors used to own a lot of land that they had to hired people to work on those rice fields. My paternal great aunt told me that when she was a young girl, she and my great, great grand mother got up every morning at 3 am to prepared breakfast for the workers. She said, the workers arrived before 5 am to eat breakfast, after they ate, my great, great grand father took the workers to the rice fields on his big boat. She said, every day, rain or shine, before noon, my great aunt and my great,great grand mother would paddles their small boat to delivered hot lunch for the workers. But my great aunt said as soon as French government illegally gave *Kampuchea Krom* (now know as South Viet Nam) to Viet Nam on June-4-1949, the Vietnamese government took away my family land and many others Khmer Krom families lands as well. My great aunt said not only that my ancestors lost all our land but many poor Khmer Krom workers lost their job too. She said this broken rice with shrimp was one of workers favorite breakfasts.
- Ingredients :
- 2 Cups un-cook Jasmine rice bit, rinsed and drained
- 2 Cups water
- 1 lb Shrimp, peeled and de-veined
- ½ Tablespoon fish sauce
- ½ Tablespoon soy sauce
- ½ Tablespoon sugar
- ¼ Teaspoon black pepper
- 3 Tablespoons vegetable oil
- 4 Stalks green onion, chopped
- 2 Cloves garlic, minced
- ¼ Cup fresh or frozen minced lemon grass
- 4 Eggs (option)
- Procedures :
Cooked broken rice with 2 cups water in a rice-cooker or cooked on the stove till it tender. Use spatula to separated cooked rice, keep rice warm and set a side.
In a large bowl, mix shrimp with fish sauce, soy sauce, sugar and black pepper, set it a side.
Pre heat a skillet or wok.
When skillet is hot, add 2 tablespoons oil and green onion, stirs till green onion soften, removed green onion from hot oil and put it in a small bowl, set a side.
Using same skillet, add garlic and lemongrass in hot skillet, stirs, add marinated shrimp and stirs till shrimp turns pinkish color, removed lemongrass shrimp from skillet, put it in a large plate and set a side.
Add remaining oil to skillet, fry eggs over easy or to your liking, when done set a side.
TO SERVE:
Put some cooked broken rice on a plate, add some lemongrass shrimp and a fried egg, and spreads some green onion on top.
Serve hot with sweet fish sauce , and
carrot with daikon relish.
