(Shrimp and rice soup. )
Khmer Krom love rice soup, we can eat rice soup at any time of the day; for breakfast, lunch, dinner or late night snack. Some people eat rice soup when they don’t feel good but most people eat rice soup because it taste so good.
Scrumptious shrimp and rice soup is Khmer Krom country food. This recipe is very easy to prepare and it is one of my favorite childhood breakfasts.
- Ingredients :
- ½ to 1 lb Shrimp, peeled and de-veins
- 3 Stalks green onion, chopped
- ½ Teaspoon salt
- 2 Tablespoons fish sauce
- ½ Tablespoon sugar
- ¼ Teaspoon black pepper
- 2 Tablespoons vegetable oil
- ½ Cup uncooked Jasmine rice
- 2 Cloves garlic, minced
- 1 Yellow onion, chopped
- 7 Cups water
- A handful of chopped cilantro and rice paddy herb
- Procedures :
In a large bowl, put shrimp with ½ amount of green onion, salt, fish sauce, sugar and black pepper, mix well and set it a side.
Pre-heat a large soup pot.
When soup pot is hot, add oil and rice, stirs till rice turns light brown color.
Add garlic and yellow onion, stirs well together, add water and cook till rice tender.
Add marinated shrimp, stirs till shrimp turns pinkish color.
Top with remaining green onion and herbs.
Serve hot with bean sprouts, chopped mint leaves, fresh limejuice, hot pepper paste, and fermented bean paste.
