(Fried soft shell crab.)
This fried soft shell crab is Khmer Krom country food.
Crispy fried soft shell crab dips with ginger fish sauce is very delicious with rice, is also great for appetizers *mahope sar*.

Removed apron (flap on the belly) of soft-shell crab, washed crab with cold water, drained and pats dry with paper towel.
Rubs garlic on top and bottom of crab shells, set a side.
In a small bowl, mix All-purpose flour with cornstarch together, mix well.
Gently rubs flour on top and bottom of crab shells.
Pre-heat oil in a skillet or wok with high temperature.
When oil is bubbling hot, drops crab in to hot oil, deep fry till both sides crispy, removed fried crab and placed it in a plate covered with paper towel to drain excessive oil.
Serve hot with rice.
Most people prefer cut fried soft shell crab to bite sizes before serve,
pour some ginger fish sauce on a plate and put fried crab on top.
