(Khmer Krom grilled blackened chicken.)
Grilled blackened chicken recipe is origin from Khmer Krom in *Karmourn Sor* Rach Gia province. *Karmourn Sor* province is well known for producing one of the best quality black peppers in the world, and *Kampuchea Krom* now know as South Viet Nam is world leading black peppers exporting. The elder Khmer Krom villagers still using the ancient grilling technique for this recipe, which marinated chicken wrapped in banana leaves then cook slowly on hot grill before banana leaves removed, and continued to grilled till chicken golden crispy.
Tender and juicy chicken meat flavor with kaffir lime leaves and lots of crushed black pepper is absolutely delicious hot or cold. Most Khmer Krom prefers blackened chicken with sticky rice.

Cleaned chicken; removed neck and organs from chicken abdomen cavity, using a sharp knife or kitchen scissor to cut along both sides of chicken back bones,
removed the back bone but don’t throw it away, freeze it to use for make soup stock.
Rinsed chicken under cold water, pats dry with paper towels, pricked on chicken breast and legs with small knife or fork so meat could get well marinated, put chicken in a container, set a side.
In a blender, put remaining ingredients in, blended well, pour and rubs marinade sauce on chicken meat, covered container with lid and refrigerated it over night or at least 5 hours.
Put a large piece of aluminum or several pieces banana leaves on pre-heated grill, take marinated chicken meat out and put it on top of aluminum foil or banana leaves, cooked chicken meat on low temperature, with lid closed for 15 minutes on each side.
Removed aluminum foil or banana leaves and continue to grilled chicken on low temperature till both sides crispy and golden brown.
Serve hot with rice.
