Kdam char sadao.
(Stir-fry crab with sadao.)
Spicy stir-fried crab with sadao is Khmer ethnic food. Back home, we uses with fresh sadao and Dungeon crab for this recipe. Here, I used frozen sadao and Maryland crab, because where I am living I can't find fresh sadao and Dungeon crab is sold pre-cooked or frozen, and very expensive
Sadao in Khmer refers to edible leaves and flowers of natural insecticide Neem trees, that has incredible, delicious bitter sweet taste. In medicine, sadao is rich with calcium and fiber. The villagers use sadao as natural laxative for treats constipation.

- Ingredients :
- 4 Maryland crabs or 1 large Dungeon crab
- 4 Cups water
- 2 Packages frozen sadao , or 2 lbs fresh sadao
- ½ Cup water
- 1 Tablespoons fish sauce
- 1 Tablespoon soy sauce
- 1 Tablespoon oyster sauce
- 1 Tablespoon sugar
- ½ Tablespoon salt
- ¼ Teaspoon black pepper
- 2 Tablespoons vegetable oil
- 6 Cloves garlic, minced
- 1 Yellow onion,sliced
- 4 Hot chili pepper,chopped(option)
- Procedures :
Scrubs and clean crab before remove top shell. Removes crab’s roe from top shell and body, and put it in a small bowl, set a side. Removes crab’s claws, and cut it body into half, set a side.
Put 4 cups water in a soup pot and boil till water bubbling.
Add sadao in to boiling water and cook it for 3 minutes, drained and rinsed under cold water. Removes sadao leaves and flowers from stems, and set it a side.
In a small bowl, mix ½ cup water with fish sauce, soy sauce, oyster sauce, sugar, salt and black pepper together, set it a side.
Pre-heat a large skillet with hight temperature.
When skillet hot add oil, garlic, onion and crab, stirs till crab turns darker pink color.
Add crab’s roe and half amount of prepared sauce, stirs well.
Add sadao, chili pepper, and pour remaining prepared sauce on top, stirs well.
Serve hot with rice and tamarind dipping sauce.
