(Shrimp omelet.)
Shrimp omelet with bell pepper, tomato and bean sprout is delicious Khmer Krom country food.
Seafood is abundant in Kampuchea Krom (now know as South Viet Nam) where our poor people eats mainly seafood.
- Ingredients :
- 4 Eggs, beaten
- ¼ Teaspoon salt
- 1 Tablespoon vegetable oil
- ½ lb Medium shrimp, peeled and de-veins
- 3 Stalks green onion, chopped
- ½ Green bell pepper, diced
- 1 Large tomato, diced
- 2 Cups bean sprouts
- 1 Tablespoon fish sauce
- ½ Tablespoon soy sauce
- ½ Tablespoon sugar
- ¼ Teaspoon black pepper
- 1 Tablespoon vegetable oil
- Procedures :
In a large bowl, mix beaten egg with salt together, mix well and set a side.
Pre-heat a skillet or wok with high temperature.
When skillet is hot, add a tablespoon oil, add shrimp, green onion, bell pepper, stirs till shrimp turns darker pink color then add tomato and bean sprout, stirs.
Seasoning with fish sauce, soy sauce, sugar and black pepper, stirs quickly and removed shrimp stuffing and put it in a large bowl, set it a side.
Using the same skillet, add remaining cooking oil in to skillet and pour egg mixture over evenly in shape of round pancake, when egg cooked put shrimp stuffing at the middle of egg, flip half side of cooked egg over to form a half moon shape.
Serve hot with rice and sweet fish sauce,
or serve with hot crusty Italian or French bread.
