(Khmer Krom wings)
Golden crispy chicken wings with garlicky flavor is delicious. Some Khmer Krom prefers fried wings with sweet palm sugar sauce but this recipe is good with or without sauce.
- Ingredients :
- 12 Chicken wings, cut in half and leave the wing’s tip on
- 4 Cloves garlic, minced
- 2 Teaspoons salt
- ½ Teaspoon sugar
- ¼ Teaspoon white pepper
- 2 Tablespoons cornstarch
- 1 Cup All purpose flour
- 5 Cups vegetable oil for deep fried wings
- Palm sugar sauce:
- 2 Tablespoons palm sugar
- 1 Tablespoon soy sauce
- 1 Table spoon oyster sauce
- 1 Teaspoon Sambal Olekek chili paste or Tobacco sauce
- Procedures :
In a large bowl, put chicken wings with garlic, salt, sugar and white pepper together, mix well, add cornstarch, mix well and refrigerated it for few hours or over night.
When ready to cook, put flour in a plastic bag, add marinated chicken wings, closed bag and shakes till wings evenly coasted with flour.
Heat up oil in a frying pan or skillet with high temperature.
When oil is hot, deep fried wings till it golden brown.
Removed cooked wings from hot oil and put it in a plate covered with paper towel to drained excessive oil.
With palm sugar sauce:
In a small sauce pan, mix all ingredients under palm sugar sauce, simmering till sauce thicken.
Pour sauce over fried chicken wings before serve.
Serve wings hot or warm.
