(Khmer Krom coffee cake.)
Khmer Krom coffee cake is one of the delicious cakes my great aunt used to make for food offerings on Khmer holidays. My dad loves coffee, whenever my great aunt made coffee cake, my dad would always told her to add ” more coffee”, and she would always said "no". My great aunt explained that if she put too much coffee in the cake, some little people (me) would be up all night from overdosed of caffeine. :)
- Ingredients :
- 1 teaspoon vegetable oil
- 3 eggs
- 1½ Cup sugar
- 1/3 Cup butter,melted
- ¼ Teaspoon salt
- ½ Teaspoon baking powder
- 2 Cups All purposes flour
- ½ Cup coconut milk
- ½ Cup cold(not ice) black coffee
- 2 Tablespoons white powder sugar
- Procedures :
Pre heat oven at 350 degrees.
Greased up a cake pan with oil and set it a side.
In a mixing bowl,put eggs, sugar and butter together, mix well till it creamy, add salt, baking powder,flour, coconut milk, and coffee, mix well. Pour mixture in greased cake pan.
Bake in pre heated oven for 35 minutes or till when inserted a toothpick in to cake and it comes out clean. Removed cake from the oven and let it cool off before take cake out. Sprinkles powder sugar on top.
Serve with hot tea or coffee.
