(Stuffed mushroom with shrimp)
Pan-fry stuffed mushroom with shrimp is delicious Khmer country food. Back home, seafood is abundant and the poor eat mainly seafood.
I was told stuffed mushroom with shrimp was my late paternal grandfather favorite appetizer. On *Bon Pchum Ben* Ancestors memorial day or on Khmer religious holidays my father always makes stuffed mushroom with shrimp for foods offerings to our ancestors.
- Ingredients :
- 1 lb Small shrimp,peeled, de-veined and grounded
- 1 Clove garlic, minced
- 2 Stalks green onion, chopped
- ½ Tablespoon soy sauce
- 1 Tablespoon fish sauce
- 1 Tablespoon sugar
- ¼ Teaspoon black pepper
- ½ Tablespoon cornstarch
- 1 lb Fresh button mushroom, removed stems, rinsed and drained
- 2 Tablespoons vegetable oil
- Procedures :
In a large bowl, put grounded shrimp, garlic, green onion, soy sauce, fish sauce, sugar, black pepper and cornstarch together, mix well.
Stuffs each mushroom with prepared shrimp stuffing, when done set a side.
Pre-heat a wok or skillet with high temperature.
When wok is hot, add oil, put mushroom with stuffing side down , pan fry till it golden brown, turns mushroom over with stuffing side up, and continued to cook for 5 minutes.
Serve hot as appetizer *mahope sar* or with rice.
