(Steamed crabmeat loaf.)
Steamed crabmeat loaf with eggs, bean thread noodles, black fungus mushroom and scallion is yummy Khmer Krom country food. Back home, I used fresh lumps Dungeon crabmeat for this recipe. Here, I use canned crabmeat because fresh lumps crabmeat is very expensive. I prefer Bumble brand because it didn’t have strong fishy odor.
- Ingredients :
- 3 Large eggs
- ½ lb Lumps crabmeat or 1 canned, 6 oz Bumblebee crabmeats
- ¼ Cup finely chopped scallion or yellow onion
- ¼ Cup already soaked and chopped bean thread noodle
- 1 Tablespoon already soaked and finely chopped black fungus mushroom
- 1 Teaspoon fish sauce
- ½ Teaspoon sugar
- ¼ Teaspoon black pepper
- Procedures :
In a large bowl, put egg, crabmeat, scallion, bean thread noodle, black fungus mushroom, sugar, fish sauce and black pepper , mix well together with chopsticks or fork.
Greased a steam-able dish or bowl with oil, pour prepared crabmeat mixture in the dish, put the dish in a steamer, steamed it for 30 minutes or till it done. To test, insert a fork or chopstick in the center of crabmeat loaf; if it comes out clean it done. Do not over cooked.
Serve hot with rice, or with broken rice.
