Sach chrouk nhoam.
(Shredded pork .)
Shredded pork meat mix with boiled shredded pork skin and roasted rice powder is one of the most popular Khmer recipes. We uses shredded pork for * num pachok sach chrouk nhoam* Khmer Krom cold noodles, for *nem sach chrouk* Shredded pork roll, for *bai moan sach chrouk* Broken rice with grilled pork chop, and many others delicious Khmer ethnic recipes.
- Ingredients :
- 1 Package 8oz frozen cooked shreddedpork skin, sold in frozen section at most Asian markets
- 1 lb Lean pork meat
- 2 Cloves garlic, minced
- 1 Tablespoon soy sauce
- ½ Teaspoon salt
- ¼ Teaspoon black pepper
- 2 Tablespoons vegetable oil
- 1 Cup water
- 4 Tablespoons roasted rice powder
- Procedures :
Soaked pork skin in the warm water, rinsed, repeats a couple times, squeezes water out, put pork skin in a colander to drained, cut 3 inches in length, set it a side.
In a large bowl, marinated pork meat with garlic, soy sauce, salt and black pepper.
Pre heat a skillet or wok with high temperature.
When skillet is hot, add oil, put marinated pork meat in skillet, pan fry till
pork meat till both sides light brown, add 1 cup water, braised pork meat in low heat till it tender, removed cooked pork meat, put it in a plate, set a side to cool off.
Sliced pork meat, then julienne it and put it in a large bowl, add shredded pork skin, roasted rice powder, mix well.
Serve withbroken rice, or noodles, or with rice paper, with crusty bread and “nem chhao” (pickle pork roll).
