(Stuffed chicken drumsticks)
Crispy boneless chicken drumsticks with lemon grass grounded meat stuffing is very popular Khmer Krom appetizers *mahope sar*.
Sometime I use the same recipe for stuffed chicken wings, but chicken drumstick is easier to de-bones than wing.
- Ingredients :
- 6 Chicken drumsticks
- 4 Cloves garlic, minced
- ¼ Cup fresh or frozen minced lemon grass
- 2 Slices fresh galanga root, or frozen galanga root, minced
- 2 Chopped chili pepper or to your taste(option)
- ¼ lb Grounded pork
- ¼ Cup already soaked and chopped bean thread noodle
- ½ Yellow onion, diced
- 2 Stalks green onion, minced
- ½ Tablespoon fish sauce
- 1 Tablespoon soy sauce
- 1 Tablespoon sugar
- ¼ Teaspoon black pepper
- 1 Cup vegetable oil
- Procedures :
Using a small sharp knife cut around the chicken bones, pull meat down, away from bone, as you cut it through the end of chicken leg, removed bone and continue de-bones the remaining chicken drumsticks.
Using mortal pestle to pounds garlic, lemon grass, galanga root and chili pepper together, when done put spices in a large bowl.
Add grounded pork, bean thread noodle,yellow and green onion, fish sauce, soy sauce, sugar, and black pepper, mix well.
Fills boneless chicken drumsticks with prepared grounded.
Pre heat oil in a wok or skillet with medium temperature.
When oil bubbling hot, fry stuffed drumsticks till it crispy and golden brown.
Serve hot with carrot and daikon relish, and sweet fish sauce.
