(Grilled turmeric chicken.)

Grilled chicken or Cornish hen with unique blended of Khmer favorite spices is delicious country food.
• Ingredients :
  • 1 Whole chicken or 1 Cornish hen, cleaned, cut in half
  • ½ Teaspoon salt
  • ¼ Teaspoon black pepper
  • ½ Cup water
  • ¼ Cup minced lemon grass
  • 2 Kaffir lime leaves
  • 4 Fresh turmeric roots, or 1 teaspoon turmeric powder
  • 2 Tablespoons soy sauce
  • 1 Tablespoon fish sauce
  • 1 Tablespoon tamarind juice (stirs well before measure)
  • 4 Cloves garlic, minced
  • 1 Stalk green onion, minced
  • 1 Tablespoon light brown sugar
  • 1 Tablespoon vegetable oil
  • 2 Chopped hot chili pepper(option)
• Procedures :
  Put chicken or Cornish hen in a large bowl or container, sprinkles salt and pepper on top, set a side.
  In a blender, put all remaining ingredients in, blended well, pour marinade sauce on chicken meat, mix well.
  Covered container with lid, and refrigerated chicken meat over night or at least 4 hours.
  Cook chicken meat on grill with low temperature till meat tender and golden brown.
  Serve hot with rice.
