( Shrimp fried rice. )
This simple and delicious shrimp fried rice is Khmer Krom country food. Seafood is abundant in *Kampuchea Krom* (now know as South Viet Nam) where poor people eat mainly seafood.
- Ingredients :
- 3 Tablespoons vegetable oil
- 2 Eggs, slightly beaten
- 2 Cloves garlic, minced
- 1 Yellow onion, chopped
- ½-1 lb Shrimp,peeled and de-veins
- 1 Tablespoons soy sauce
- ½ Teaspoon Sambal Oelek grounded chili paste (option)
- ½ Teaspoon salt
- ¼ Teaspoon black pepper
- 4 Cups cooked Jasmine rice.
- ¼ lb bean sprouts, washed and drained
- 2 Stalks green onion, chopped
- Procedures :
Heat up a non-stick skillet with high temperature.
When wok is hot, add 1 tablespoon oil and egg, cook egg like omelet, folds egg when it cooked, remove fried-egg from wok and sliced it thin strips, set a side.
Using same wok, pour remaining 2 tablespoon oil, add garlic, onion and shrimp, stirs.
Seasoning with soy sauce, chili paste, salt and black pepper, stirs well till shrimp turns darkers color pink.
Add cooked rice, stirs till rice fluffy hot.
Add bean sprout, fried eggs and green onion, stirs well.
Serve hot.
Taste great with ginger cabbage salad, or withtomato cucumber relish.
