( Hot spicy lemon grass chicken. )
Spicy lemon grass chicken is very delicious Khmer ethnic food. Back home, Khmer Krom prefers this recipe with cut up chicken or duck with bones and skin on.
- Ingredients :
- 1 Tablespoon sugar
- 1 Tablespoon water
- ½ Cup water
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- 1 Yellow onion, sliced
- ¼ Cup fresh or frozen minced lemon grass
- ½ lb Skinless and boneless chicken breast, sliced thin
- 1 Tablespoon sugar
- ½ Teaspoon salt
- 2 Tablespoons fish sauce
- ¼ Teaspoon black pepper
- 4 Sliced fresh chili pepper or to your taste (option)
- ¼ Cup unsalted roasted peanut, crushed
- Procedures :
Put 1-tablespoon sugar and 1-tablespoon water in a small saucepan, cook it in low heat and stirs frequently till sugar turns dark brown color, and not burn.
Immediately pour ½ cup water with caramelized sugar, stirs and remove from the heat and set it a side.
Heat up a skillet or wok with high temperature.
When skillet hot, add oil, garlic, onion, lemon grass, chicken and caramelized sauce, stirs well.
Seasoning with sugar, salt, fish sauce, black pepper and chili pepper, stirs and simmering till chicken meat tender and sauce reduced.
Top with roasted peanut before serve.
Serve hot with rice.
