Num banh hoi pakon.
(Rice thread noodle with shrimp.)
Delicious rice thread noodle “num banh hoi” with shrimp is Khmer Krom country food that origin from Peam (Ha Tien), where seafood are abundant and the poor eats mainly seafood. Back home, our people make "num banh hoi" with fresh boiled prawn, and some people prefer "num banh hoi" with fresh grilled prawn. These prawns are as big as lobster. The poor villagers usually reverses "Num banh hoi" with fried prawn for special occasion or for special guests because most could not afford cooking oil.
Large prawn is seldom available where I am and lobster is very expensive. I usually buy jumbo shrimp for this recipe.
- Ingredients :
- 1 Tablespoon vegetable oil
- 2 Stalks green onion, chopped
- 1 Package fresh cooked banh hoi noodle( sold at Asian markets)
- 1 lb Jumbo or large shrimp, peeled and de-veins
- 2 Cloves garlic, minced
- 1 Tablespoon soy sauce
- ¼ Teaspoon salt
- ¼ Teaspoon black pepper
- 1 Cup all purpose flour
- 1 Cup ice water
- 2 Tablespoons corn starch
- 4 Cups vegetable oil for deep fry shrimp
- Roman lettuce, washed and drained
- 1 Cucumber, peeled and sliced thinly
- Fresh mint leaves or mix herbs, washed and drained
- Procedures :
Heat 1 tablespoon oil in a small saucepan. When oil is hot add green onion and sauté till it soften. Removed onion oil from the stove and set it a side.
Put a layers of cooked noodle on a plate, spreads onion oil on top noodle. Repeat same procedure with another layer noodle till it done, set it a side.
In a large bowl, put shrimp with garlic, soy sauce, salt and black pepper together, mix well.
In another large bowl, mix all-purpose flour with cornstarch and water, mix well.
Add marinated shrimp to prepared flour batter, stirs.
Heat 4 cups vegetable oil in a large frying pan. When oil is hot, drops each shrimp in to boiling hot oil and deep fried shrimp till it golden brown. Removed fried shrimp and put it in a plate that covered with paper towel to drain off excessive oil.
TO SERVE: Arranges lettuce, sliced cucumber and mix herbs on a large plate. Put prepared rice thread noodle “num banh hoi” on another large plate with fried shrimp and sweet fish sauce.
To eat: Wraps shrimp with lettuce leaf, noodle, vegetable and dips in sweet fish sauce. Yummy!
