( Yellow yam soup with pork ribs.)
Yam is one of ancient Khmer vegetables; yam is totally different to sweet potato which also calls yam in America. Yam is much larger than sweet potato, some yam weight over hundred pounds. Out side, yam has rough brownish skin which resembling to tree’s bark , inside is edible and comes with several colors; white, purple, yellow, and reddish. In Kampuchea Krom, the most popular colors yam is white and purple yam.
In medicine, our people eats yam for treatments of skin rash, breathing problem such as asthma. Yam produces natural steroid, which our poor people needs the energy for survive.
Yellow yam soup with pork riblets is Khmer Krom country food. It is very yummy and very easy to cook.
- Ingredients :
- 1 lb Pork riblets, cut chunks bite sizes
- 5 Cups water
- 1 ½ lbs. Yellow yam peeled and cut to small cubes
- 1 Stalk celery, chopped finely
- 1 Tablespoon fish sauce
- ½ Tablespoon sugar
- ½ Teaspoon salt
- ¼ Teaspoon black pepper
- 2 Stalks green onion,chopped
- Procedures :
Put pork riblets and water in a soup pot and cook till meat tender.
Add yellow yam, celery and cook till yam tender.
Seasoning with fish sauce, sugar, salt and black pepper.
Top with green onion.
Serve hot with rice.
