Mee char sach ko poang moan.
( Stir-fried beef noodle.)
Stir-fry beef noodles with vegetables and fried egg is delicious Khmer Krom food.
- Ingredients :
- 6 Cups water
- 1 Package thick egg noodle, or thick wheat noodle
- ½ Cup water
- 1 Tablespoon fish sauce
- 1 Tablespoon oyster sauce
- 1 Tablespoon sugar
- 1 Teaspoon cornstarch
- ½ lb Beef sirloin, sliced thin
- 1 Tablespoon soy sauce
- ½ Teaspoon salt
- ¼ Teaspoon black pepper
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- 1 Yellow onion, sliced
- 1 lb Yu choy, washed and cut 2 inches in length
- 1 Tablespoon vegetalbe oil
- 4 eggs
- Procedures :
Put 6 cups water in a large pot, cook till water bubbling, add noodle in boiling water and cook till noodle tender. Pour cooked noodle in a colander, rinsed under cold water, drained and set it a side.
In a small bowl, mix ½ cup water with fish sauce, oyster sauce, sugar, and cornstarch together, mix well and set it a side.
In a large bowl, mix beef with soy sauce, salt and black pepper together, mix well and set a side.
Pre-heat a large non-stick skillet or wok.
When skillet is hot, add oil, garlic, yellow onion, marinated beef and yu- choy, stirs well till meat tender, add cooked noodle, stirs well till noodle hot.
Seasoning with prepared cornstarch sauce, stirs well, turn off the stove and set a side.
Pre-heat a small non-stick skillet.
When skillet is hot, add 1 tablespoon oil, fry eggs to your liking (over-easy or well done.)
TO SERVE:
Put some stir-fried beef noodle in a plate, top with fried egg and serve imediately.
