(Braised pig ear. )
Most Khmer Krom men love chewy or crunchy foods, and one of their favorites appetizers *mahope-sra* is this tasty pig ear braised with coconut juice and five spice powder.
- Ingredients :
- 3 Pig ears.
- 6 Cups water
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- 1 Cups fresh or can coconut juice
- 1½ Tablespoons sugar
- ¼ Teaspoon salt
- 1 Tablespoon soy sauce
- ½ Teaspoon all spice powder
- ¼ Teaspoon black pepper
- 2 Drops of red food color(option)
- Procedures :
Usually pig ears already cleaned before it go on sale at the markets, but I always clean and wash it again.
Boiled pig ears with 6 cups water for 30 minutes (do not over cook), drained, set a side.
Pre heat a wok or skillet with high temperature.
When wok is hot, add oil, garlic and boiled pig ears, stirs till it lightly brown, pour coconut juice over, stirs.
Seasoning with sugar, salt, soy sauce, all spice and black pepper, add couple drops of red food color (option), stirs well.
Simmering till the liquid thicken and caramelized.
Sliced pig ears thin before serve.
