Omelet is easy cook but Khmer Krom country recipe omelet with mustard green pickle,, onion and hot chili pepper is absolute delicious.
To poor Khmer Krom, a jar of mustard green pickle can go along way.
- Ingredients :
- 4 Eggs
- 1 Tablespoon fish sauce
- ½ Teaspoon sugar
- ¼ Teaspoon black pepper
- 2 Tablespoons vegetable oil
- 1 Clove garlic, minced
- ½ Yellow onion, chopped
- 1 Cup finely chopped mustard green pickle *spee chrout*
- 1 Stalk green onion, chopped
- 2 Chopped hot chili pepper or to your taste(option)
- Procedures :
In a large bowl , put eggs, with fish sauce, sugar, and black pepper, slightly beaten, set a side.
Pre-heat a non-stick skillet or wok with high temperature.
When the skillet is hot, add cooking oil, garlic, yellow onion and mustard green pickle, stirs well.
Pour and spread egg mixture evenly over mustard green pickle to form shape like pancake.
Sprinkles green onion and chili pepper on top, covered skillet with lid and turn temperature down to low.
Back home, Khmer Krom villagers usually cook with charcoal or wood stove, when they make omelet, they would covered skillet with lid, they put few hot charcoals or wood on top the lid and it cook very nicely on both side without having to turn the cake.
I usually heat up another skillet, greased it with oil and place other skillet over the other skillet, and flip it over, then remove the top skillet and continue to cook till egg done.
Serve hot with rice and
sweet fish sauce
