(Stuffed pork tender loin. )
Roasted marinated pork tender loin stuffed with tofu and spinach is delicious.
Tender loin is the best cuts of meat. The lean, boneless pork tender loin is the most tender and expensive meat. When you buy pork tender loin meat look for the reddish pink color.
- Ingredients :
- 1½-2 lbs. Pork tender loin
- 2 Tablespoons soy sauce
- 2 Cloves garlic, minced
- ¼ Teaspoon salt
- 1 Pieces firm tofu
- 1 Cup frozen spinach
- 1 Stalk green onion, minced
- 1 Tablespoon fish sauce
- 1 Tablespoon oyster sauce
- ½ Tablespoon sugar
- ¼ Teaspoon black pepper
- 2 Tablespoons vegetable oil
- 2 Cups chicken broth or 1 canned chicken broth
- Strings to tie meat
- Procedures :
Cut an opening,length wide, on 1 side of pork tender loin, do not cut through, after cut it should open out like butterfly, set a side.
In a small bowl, mix soy sauce, salt and garlic together, rubs sauce on pork tender loin, set a side.
In a large bowl, mashed tofu to small pieces, add spinach, green onion, fish sauce, oyster sauce, sugar and black pepper, mix well, stuffs prepared tofu stuffing in the fold of pork tender loin.
Ties strings firmly to secure stuffing, not too tight stuffing may leak out.
Pre-heat a skillet or wok with high temperature.
When skillet is hot, add oil and stuffed pork tender loin,pan-fry till both sides are lightly brown, put stuffed pork loin in a baking pan.
Pour chicken broth on bottom of baking pan, covered baking pan with aluminum foil.
Bake at 300 degrees for 1½ hours,removed aluminum foil, increase oven temperature to 400 degrees.
Continue bake stuffed pork tender loin for 30 more minutes.
Remove from oven, cut off strings before sliced meat.
Serve hot with any Khmer Krom fried rice and salad.
