Borbo sach ko .
( Beef rice soup. )
This delicious beef and rice soup from Khmer Krom in *Karmourn Sor* Rach Gia province. Most people prefers this soup with beef tripe. In the old time, the villagers used mostly water buffalo meat *sach korbey* for this rice soup.
- Ingredients :
- 1 Tablespoon vegetable oil
- ½ Cup uncooked Jasmine rice
- 2 Cloves garlic, minced
- 1 Yellow onion, chopped
- 1 Teaspoon grated fresh ginger root
- 1 Tablespoon preserved cabbage
- ½ lb Beef chuck, cut to bite size
- ½ Teaspoon salt
- 1 Tablespoon soy sauce
- 2 Tablespoons fish sauce
- 1 Tablespoon sugar
- 8 Cups water
- ¼ Teaspoon black pepper
- 2 Stalks green onion,chopped
- WITH BEEF TRIPE: (Option)
- ½ lb Honeycomb beef stripe
- 2 Tablespoons baking soda
- 5 Cups water
- Procedures :
Pre-heat a large soup pot.
When soup pot is hot, add oil and rice, stirs till rice turns light brown color.
Add garlic, onion, ginger, preserved cabbage and beef, stirs well.
Seasoning with salt, soy sauce, fish sauce and sugar, stirs well.
Add 8 cups of water and cook till rice and meat tender.
Add black pepper and green onion before serve.
Serve hot with beansprout , chopped mint leaves, slice fresh lime, hot pepper paste, and fermented bean paste.
FOR WITH BEEF TRIPE:
Put beef tripe in a large bowl, rubs baking soda on honeycomb beef tripe and rinse well under water. Repeat procedure couple times before boil beef tripe with 5 cups water till beef tripe tender. Remove beef tripe from hot water, rinse under cold water and cut to bite sizes, put beef tripe in hot soup.
