( Peppered pork and shrimp. )
Delicious pork and shrimp with sweet, spicy hot peppered caramelized sauce is Khmer Krom country food. The villagers prefers pork belly ( sach chrouk bei choen)or pork meat with skin on because it is cheaper than lean meat, and it taste better.
- Ingredients :
- 1 Tablespoon water
- 1 Tablespoon sugar
- ¼ Cup water
- 2 Tablespoons vegetable oil
- 2 Cloves garlic, minced
- ½ lb Pork lean meat or pork belly, sliced thin
- ½ Teaspoon salt
- ½ lb Small or medium size shrimp, removed heads and tails but leave shells on
- 1 Tablespoon sugar
- 1 Tablespoon fish sauce
- ½ Teaspoon black pepper
- Procedures :
Put 1-teaspoon sugar and 1-tablespoon water in a sauce pan, cook and stirs till sugar turns dark brown color, and not burn. Pour ¼ cup water over caramelized sugar and set it side.
Pre-heat a wok or skillet. When it hot add oil, garlic and pork meat.
Add caramelized sauce and salt, stirs well.
Simmering for 10 minutes or till meat tender.
Increase cooking temperature to high then add shrimp, stirs till shrimp turns darker color pink.
Seasoning with sugar, fish sauce, and black pepper. Stirs well till sauce reduced.
Serve hot with rice.
