This delicious grilled chicken flavor with hot spicy cilantro and tamarind is one of my dad recipes. Like most Khmer Krom men, my dad is very good cook. When he was single, he taught himself how to cook. Most his recipes are simple but always tasty.
- Ingredients :
- 1 Small chicken, cleaned, cut chicken in half and cut off wings
- 1 Teaspoon salt
- ¼ Teaspoon black pepper
- ½ Cup water
- 3 Cloves garlic, peeled
- 1 Stalk green onion, chopped
- 1 Cup chopped fresh cilantro
- 1 Tablespoon seedless tamarind pulps
- 3 Tablespoons soy sauce
- 1 Tablespoon light brown sugar
- 6 Hot chili pepper, or to your taste (option)
- Procedures :
Put chicken in a large container, rubs salt and black pepper on chicken meat, set a side.
In a blender, put water, garlic, onion, cilantro, tamarind pulp, soy sauce, sugar, chili pepper and water, blended it together, pour sauce over chicken meat, rubs sauce all over chicken meat, covered container with lid and put it in refrigerator over night or at least 4 hours.
Cook chicken meat on hot grill with low temperature till chicken meat tender.
Serve hot with rice, and dips in mixture of salt, black pepper and fresh lime juice.
