(Hot tomato fish.)
Fish with spicy hot tomato sauce is delicious Khmer Krom country food. Back home, normally we use snakehead fish *trey toke*. Here, I used striped bass or striped mullet fish for this recipe, because fresh snakehead fish is not available where I live .
- Ingredients :
- 3 Large tomatoes, chopped
- 2 Cloves garlic, minced
- 1 Small yellow onion, chopped
- 1 Stalk celery, chopped
- 3 Hot chili pepper or to your taste (option)
- 1 Teaspoon paprika
- 1 Teaspoon curry powder
- 2 Kaffir lime leaf
- 2 Tablespoons fish sauce
- 1 Tablespoon sugar
- 1 Cup water
- 1 Whole mullet fish, approx 1 ½ lb, clean cut half or chunks
- ½ Teaspoon salt
- ¼ Teaspoon black pepper
- 2 Tablespoons oil
- Procedures :
Using a blender, put tomato, garlic, onion, celery, chili pepper, paprika, curry powder, kaffir lime leaf, fish sauce, sugar, and water, blended it well together, and set it a side.
Rubs salt and pepper on both sides fish and set it a side.
Heat up a large skillet or wok with high temperature.
When skillet is hot, add oil and fish, pan fry fish till both sides light brown.
Pour prepared tomato sauce on top of fish, covered skillet with lid and simmering till sauce thicken.
Serve hot with rice along with steamed, boiled or raw vegetables.
