(Chicken wings with mango. )
Spicy chicken wing with crisp green beans and mango is delicious Khmer Krom country food.
- Ingredients :
- 4 Cups water
- ½ lb Green bean, cut 2 inches
- 1 Cups water
- ½ Tablespoon corn starch
- 1 Tablespoon sugar
- 1 Tablespoon soy sauce
- 1 Tablespoon oyster sauce, or vegetarian oyster sauce
- 2 lbs,approx 8 chicken wing
- 2 Cloves garlic, minced
- 1 Teaspoon salt
- ¼ Teaspoon black pepper
- 1 Cup all purpose flour
- 5 Tablespoons vegetable oil
- 1 Yellow onion, sliced
- 1 Firm mango, peeled and sliced
- 3 Chopped chili pepper or to your taste,(option)
- Dash of black pepper
- Procedures :
Put 4 cups water in a pot and cook till water bubbling, add green bean to boiling water and cook for 5 minutes, drained and set a side.
In a small bowl, mix 1 cup water with cornstarch, sugar, soy sauce and oyster sauce together, set a side.
Cut chicken wing at each joints and discards the tips.
In a large bowl, put chicken wing, garlic, salt, black pepper,and flour, mix well and set a side.
Pre-heat a wok or skillet.
When skillet hot,add 3 tablespoons oil and pan fried chicken wing in low heat till both sides wing golden crispy, removed cooked wings from heat and put it on paper towels to drains excessive oil, set a side.
Using same skillet, add remaining 2 tablespoons oil, onion, green bean, mango and chili pepper, stirs well.
Seasoning with prepared sauce and black pepper, stirs till sauce thicken.
To serve:
Put fried wing on a large seving plate, pour stir-fry vegetables on top.
Serve hot with rice.
