Broken rice with fry egg and grill chicken is delicious Khmer Krom ethnic food that usually serve for breakfast.
- Ingredients :
- 1 Cup un-cook Jasmine rice bit, rinsed and drained
- 1 Cup water
- 1 lb Boneless chicken breast or 2 chicken legs
- 2 Cloves garlic, minced
- 1 Tablespoon soy sauce
- 1 Tablespoon light brown sugar
- 1 Tablespoon fresh lemon or lime juice
- ½ Teaspoon salt
- ¼ Teaspoon black pepper
- 3 Stalks green onion, chopped
- 2 Tablespoons vegetable oil
- 2 eggs
- Procedures :
Cook rice with a cup of water in automatic rice-cooker or on the stove till rice tender. Use spatula to separated cooked rice, keep rice warm and set a side.
In a large bowl, mix garlic with lime juice, salt, black pepper, soy sauce, sugar and ½ amount of chopped green onion together, add chicken, mix well and
refrigerated it over night, or at least 4 hours.
Cook chicken on grill with low temperature till meat tender and golden brown, when meat done set a side.
Pre-heat a non-stick skillet.
When skillet is hot, add oil and remaining green onion, sauté green onion till it soften, removes onion and put in a small bowl, set a side.
Using the same skillet to fry egg with, cook egg to your liking; sunshine up, over easy or well done.
Put some cooked broken rice on a plate, spreads some onion oil on top of rice.
Add grilled chicken and fry egg.
Serve hot with carrot and daikon relish and sweet fish sauce.
