Num ta leng *banh xeo* sap.
( Khmer vegetarian pancake . )
Khmer vegetarian pancake stuffed with tofu, jicima, mung beans and bean sprouts is absolute delicious. At my province, we calls Khmer vegetarian pancake *num banh xeo sap* other provinces calls *num ta leng sap*.
Because my family and friends can’t taste the different between *num banh xeo sap* or *num banh xeo pait* (Khmer meat pancake) that I started to makes Khmer vegetarian pancakes smaller than Khmer meat pancake so they could tell the different. :)
- Ingredients :
- ¼ Cup peeled mung bean
- 2 Cups water
- 1 Cup rice flour
- 2 Tablespoons cornstarch
- 1½ Cups water
- 1 Cup coconut milk
- 1 Teaspoon sugar
- ¼ Teaspoon salt
- ¼ Teaspoon turmeric powder
- 2 Stalks green onion, chopped finely
- 2 Tablespoons vegetable oil
- 1 Piece firm tofu, mashed
- 1 Cup dices jicima
- 2 Tablespoons mushroom sauce
- ¼ lb or 2 cups bean sprouts
- Procedures :
Put mung beans and 2 cups water in a small pot, cook till beans tender. Pour cooked beans in a colander and set a side to drain.
In a large bowl, mix rice flour with corn starch, water, coconut milk, sugar, salt, turmeric powder and green onion together. Mix batter well and set it a side.
In a medium bowl, mix tofu with cooked mung bean, jicima and mushroom sauce together, mix well.
Pre heat a skillet, when it hot, add 1 tablespoon oil. Sauté prepared tofu till it hot then add bean sprouts, stirs, turn off the stove and set it a side.
Heat up a non-stick wok or skillet. When wok is hot, take a piece of paper towel and dips it in the remaining oil. Take the oily paper towel and wipes in side, on top of wok or sprays wok with *Pam*.
Stirs flour batter then pour some flour batter over hot wok, spreads flour batter in a circle form like full moon shape.
Add some prepared filling in middle of pancake. Cover wok with lid and cook till the bottom of pancake is golden brown.
Flip half side of the cake over to form a half moon shape. Remove pancake from wok and put it in a plate.
Continue to make more pancakes until flour batter gone. This recipe for 10 small vegetarian pancake or 6 large size.
HOW TO EAT:
Wraps lettuce with piece of pancake, slice of cucumber and a few mint leaves, and dips it in vegetarian fish sauce or sweet soy sauce.
