(Caramelized fish with mango.)
Delicious caramelized red-tail fish with mango is authentic country recipe from Khmer Krom in Karmourn Sor ( Rach Gia) province.
- Ingredients :
- 1 Tablespoon water
- 1 Tablespoon sugar
- 1 Cup water
- 2 Cloves garlic, minced
- 1 Yellow onion, sliced
- ¼ Cup fish sauce
- 1 Tablespoon sugar
- 2 Red tail fish, removed scales and guts and scales
- 2 Green or firm mango, peeled, seeded and cut chunks bite sizes
- 1 Stalk green onion, chopped
- ¼ Teaspoon black pepper
- Procedures :
First make caramelized sauce by put 1 tablespoon of water and 1 tablespoon of sugar in a pot or skillet that big enough to hold all ingredients. Cook and stir frequently till sugar turns dark brown color, immediately pour 1-cup water over caramelized sauce, stirs well.
Add garlic, yellow onion, fish sauce and sugar, stirs well.
Add fish and mango and simmering till fish tender.
Top with green onion and black pepper.
Serve hot with rice and fresh slices cucumber.
