Nhoam lahong swai .
(Green papaya and mango salad.)
Boiled shrimp with crisp shredded papaya and chunks of sweet mango salad, and vinaigrette sauce is absolute delicious. This authentic recipe is from Khmer Krom in *Swa-Ton*. *Swa-Ton* Tri Ton is a little town from *Mott Chrouk* Chau Doc province.
*Swa* is meaning monkey in Khmer.
*Ton* is meaning holding-on to in Khmer.
*Swa-Ton* in Khmer meaning groups of monkey travel in single lane that followed the leader monkey by holding on to the tail of the monkey in front. Many years ago Swa-ton was a jungle with lot of big tall trees, some trees was as tall as mountains in *Mott Chrouk*. *Swa-ton* was home of many wild animals, tiger, elephant, snake and lot of monkey species.
- Ingredients :
- ½ to 1 lb Shrimp
- 2 Cups water
- ¼ Cup lime juice
- 1 Tablespoon sugar
- ¼ Teaspoon salt
- 1 Large green papaya( approx 2 to 3 lbs), peeled, seeded and shredded, or 6 cups already shredded green papaya
- 1 Large green mango, or firm mango, peeled, seeded and cuts to bite size
- ½ Cup unsalted roasted peanut
- A handful chopped mint leaves
- Procedures :
Cook water in small pot, add shrimp to boiling water and cook till shrimp turns color pink. Pour cooked shrimp in a colander, rinsed with cold water, peeled, de-veined and set it a side.
In a small bowl, mix lime juice with sugar and salt together, mix well and set a side.
In a large bowl, put shredded green papaya and cooked shrimp together, mix well, add prepared lime sauce over, mix well, add mango, roasted peanut and mint, mix well and serve immediately.
Serve as appetizer (mahope sar)or with rice along with sweet fish sauce.
