(Rice noodle with lemon grass beef and spring roll.)
My family always has a lot of friends and relatives visits us on special occasions or holiday such as New Year. One of the most popular recipes that our guests love is rice noodle with lemon grass beef and spring roll. This yummy Khmer Krom recipe made up from combination of lemon grass beef kabob recipe and chicken spring roll recipe.

Make Lemon grass beef kabob, when done set a side.
Make Chicken spring roll, when done set a side.
Boil 8 cups water in a large pot. When water bubbling add noodle and cooked till the noodle tender. Pour noodle in to a colander, rinses under cold water and set a side.
Pre-heat a small saucepan. When is hot add vegetable oil and green onion, sauté green onion till soften, removed onion oil from the stove and set a side.
In a large bowl, mix bean sprouts, cucumber, lettuce and mint together, set a side.
TO SERVE:
Put some noodle in a large bowl, spreads some green onion oil on top of noodle.
Put some lemon grass beef kabob, cut up some spring roll and put it on top of noodle.
Add vegetables and pour some sweet fish sauce over noodle and top with crushed peanut.
Enjoy.
