(Khmer Krom coconut rice and bean.)
Fragrant ice and black eyes peas is one of the dish that our people like to eat on New Year for good luck.
This tasty coconut rice and bean is a very popular dish with Khmer Krom vegetarians, and none vegetarians. I used frozen black eyes peas for this dish because it quicker and easier.
- Ingredients :
- 1 Cup un-cooked Jasmine, rinsed and drained
- ½ Cup frozen cooked black eyes peas, rinsed and drained
- 1 Kaffir lime leaf
- 1 Cup coconut milk
- ½ Cup water
- ¼ Teaspoon salt
- ¼ Teaspoon sugar
- 2 Stalks green onion, chopped
- Procedures :
Cook rice, black eyes peas and kaffir lime leaf with coconut milk and ½ cup water in a small non-stick pot on medium low temperature, stirs frequently and cook till liquid reduced.
Seasoning with salt and sugar, stirs well, covered rice pot with lid and simmering till rice and peas tender.
Removed kaffir lime leaf, add green onion, stirs well.
Serve either hot or warm with ginger and cabbage relish or tomato and cucumber relish.
