(Vegetarian stuffed bitter melon).
Stuffed bitter melon with tofu and peanut savoring with sweet soy dipping sauce is authentic Khmer Krom vegetarian recipe.
- Ingredients :
- 1 Medium size bitter melon
- 2 Pieces soft tofu, mashed
- ½ Cup roasted peanut, crushed
- ¼ Teaspoon salt
- ¼ Teaspoon black pepper
- 2 Stalks green onion, chopped
- Procedures :
Cut bitter melon cross-wide to an inch rings, removed seeds, rinsed, drained and set a side.
In a large bowl, mix tofu with peanut, salt, black pepper and green onion together, mix well.
Stuffs bitter melon rings with prepared tofu, when done put stuffed bitter melon rings in a steamer and steamed it for 40 minutes.
Pour sweet soy sauce or hoisin dipping sauce, on a plate, arranges stuffed bitter melon on top of sauce before serve.
Serve hot with rice.
