This authentic noodle recipe is basically a combination of different delicious Khmer Krom recipes, which serve with rice vermicelli noodles, mix vegetables, fresh herbs and savoring with sweet fish sauce.
Khmer Krom rice noodle with spring roll, grilled pork and grilled shrimp is one of my family favorite noodles. This recipe could make ahead, you could substitute with any kind of grilled meat or spring roll that you prefer. It's great to serve at buffet style dinner party. Set out sample of a bowl noodles as seen in photo for the guests, so that they could help themselves.
- Ingredients :
- 8 Cups water
- 1 Package rice vermicelli noodles
- 1 ½ to 2 lbs lean pork meat or beef or chicken, sliced thin
- 3 Cloves garlic, minced
- 1 Tablespoon soy sauce
- 1 Tablespoon sugar
- ¼ Teaspoon black pepper
- 1 lb Extra-large shrimp,peeled and de-veined
- SPRING ROLLS: Select favorite spring roll from my Khmer Krom recipes listed under Appetizers (Mahope Sar).
- 3 Stalks green onion, chopped
- 2 Tablespoons vegetable oil
- ½ lb Bean sprouts, washed and drained
- 1 Large cucumber, peeled and julienne
- A bunch lettuce leaves, washed and drained
- Mint or mix herbs, chopped
- Procedures :
Boil 8 cups water in a large pot. When water bubbling add noodle to boiling water and cook till it tender. Pour cooked noodle into a colander, rinses under cold water and set a side.
In a large bowl, marinated pork meat with garlic, soy sauce, sugar and black pepper, mix well and refrigerated for at least an hour before cook. Cook meat on grill with medium low temperature. When meat cooked remove from the heat and set it a side.
Cook raw shrimp on same grill till it change color on both sides. Remove cooked shrimp from heat and set a side.
SPRING ROLLS: Once you made your spring roll selection from my Khmer Krom recipes, follow that direction.
When spring rolls cooked, cut to bite sizes and set a side.
SCALLION OIL: Put vegetable oil in a small saucepan. When the oil is hot add chopped onion, stirs well before remove from heat and set a side.
Arranges all vegetables and herbs on a large platter, set a side.
TO SERVE:
Put some noodle in a large bowl, spreads some scallion oil on top and add few remaining items as seen from photo.
Pour some sweet fish sauce on top and top with carrot and daikon relish(option).
Enjoy.
