(Coconut chicken fried rice.)
Scrumptious coconut chicken fried rice is authentic Khmer Krom recipe. It is very tasty and easy to cook.
- Ingredients :
- 2 Tablespoons vegetable oil
- 2 Clove garlic, minced
- 1 Yellow onion, chopped
- ½ lb Boneless chicken breast, diced
- ¼ Teaspoon turmeric powder, or 1 teaspoon grated fresh turmeric roots
- 1 Teaspoon fish sauce
- ½ Teaspoon sugar
- ¼ Teaspoon black pepper
- ¼ Cup coconut milk
- 2 Cups fresh or frozen mix carrot and peas
- 4 Cups cooked rice
- Procedures :
Pre heat a skillet or wok.
When skillet is hot, add oil, garlic, oinon and chicken, stirs well.
Seasoning meat with turmeric, fish sauce, sugar and black pepper, stirs.
Add coconut milk and vegetables, stirs, cook till meat tender and sauce reduce.
Add rice, stirs till rice hot and fluffy.
Server hot.
