(Fried fish with tamarind sauce.)
Crispy fried fish savoring with tamarind sauce is authentic Khmer country recipe. Many Khmer Krom villagers are too poor to buy cooking oil, they usually grilled fish instead of fried fish which taste very good as well. I used trout for this recipe, but any fresh water fish is fine.
- Ingredients :
- 1 Whole trout, cleaned but keep head on, pat dry with paper towel
- 2 Tablespoons vegetable oil
- 1 Gloves garlic, chopped
- Follow tamarind sauce recipe
- Procedures :
Pre heat a large wok or skillet with high temperature.
When wok is hot, add oil and garlic, saute' garlic till brown, removed garlic from hot oil.
Carefully put whole fish in hot oil and pan fry till golden brown on both sides.
Remove fried fish and put it on a large plate, pour tamarind sauce recipe over fried fish.
Serve hot with rice and fresh vegetables or mix herbs.
