(Khmer Krom vegetarian stew.)
Khmer Krom vegetarian stew with eggplant, bitter melon, pumpkin, spinach and spices is very tasty.

In a blender, put water with coconut milk, lemon grass, galanga, kaffir lime leaves, turmeric, paprika and garlic together. Blended well.
Put eggplant and bitter melon in a soup pot, pour spices sauce over, stirs and cover the pot with lid. Simmering till eggplant tender, add pumpkin, spinach and roasted rice powder. Cover with lid and cook till pumpkin tender.
Seasoning with mushroom sauce, salt and sugar, stirs well.
Serve hot with rice or hot bread.
